Ingredients:
2 1/2 cups water
1 tbsp. Miso paste
1 tsp. mustard
1 tsp. ginger
1 shallot, finely chopped
30g tofu, cut into cubes
1 cup baby spinach leaves
Preparation Method:
• Over medium heat mix water, miso, mustard and ginger and bring to the boil.
• Place tofu and spinach leaves in a bowl and pour Miso over top.
• Serve with shallots.
