Ingredients:
2 tsp. sesame or canola oil
350g tofu, cubed
1 carrot, sliced
2 cups snow peas, sliced
1 red capsicum, sliced
2 tbsp. honey
1 tbsp. soy sauce
Preparation Method:
- Preheat a wok or frying pan over high heat. Add the oil and cook the tofu in batches for 4 mins or until cooked through and set aside.
- Cook the carrot and snow peas for 1 minute, then add to the tofu.
- Add capsicum and cook for a further 2-3 mins.
- Add the honey and soy to pan and cook for 1 minute or until reduced and caramelised. Pour over the tofu and vegetables and serve.
