1 cup Broccoli, florets
4 tablespoon grated carrot
½ cup sweet corn
6-7 chopped walnuts
2 tablespoon cranberries/ raisins
1 tablespoon lemon juice
1 tablespoon low fat mayonnaise
1 tablespoon yogurt
Black pepper and salt to taste
1. Mix dressing in a bowl with mayonnaise, lemon juice, yogurt, pepper and a pinch of salt.
2. In another bowl add blanched broccoli ( put broccoli in hot water for 2 minutes), carrot, sweet corn, cranberries, walnuts.
3. Store in the fridge.
4. Add dressing into the bowl just before serving and mix well.
